Large roasts and other big cutting tasks need a special knife. This Xinzuo carving knife is able to tackle your biggest cuts of meat. Hams, lamb legs, and similar cuts are all within the capabilities of this blade.
The Granton edge increases the knife's cutting and slicing performance by creating air pockets between the food and the side of the blade, allowing the meat to slid away and fall for better cuts. With this easier release it helps prevent tearing your delicate cuts of meat.
The blade is made from German Din 1.4116 Stainless Steel. This allows for a good resistance to rust while maintaining a sturdy edge. The 15 degree edge is hardened to 56-58 HRC on the Rockwell scale.
This is a little soft for a knife, but since the blade is made from stainless rather than high carbon steel, the lower hardness works well with the steel. This lower hardness makes the steel more durable since it is less brittle and less carbon to make the steel capable of harder edges.
The lower hardness doesn’t prevent this knife from cutting cleanly through meat. The 12 inch blade provides enough leverage and edge to glide through meat without damaging the cuts. Combined with the ergonomic handle, and you will be able to use this knife comfortably for long periods.
